Apple Coriander Chutney

This is the chutney I make when guests are five minutes from the door and the fridge is mostly apples. All six tastes land on one spoon: sweet from the apple, sour from the lemon, salty from the pinch, pungent from the chilli, bitter and astringent from the coriander stems. It is a small lesson in why a balanced plate does not need ten dishes. Eat it the day you make it. It does not keep, and it is not meant to.

Ingredients:
  • 1 Granny Smith Apple
  • 2 Tablespoon Coriander Leaves
  • 2 Tablespoon Chopped Fresh Mint
  • 1 Teaspoon Crushed Cumin
  • Salt to taste
  • 2 Cloves Crushed Garlic
  • 1 Small Green Chilli
