Dhana jeera is the masala that lives next to the stove. Equal parts coriander and cumin, toasted and ground, and it suits every constitution, which is why I teach it first in every class I have run since 2000. The aloo fry is here to show you what the masala does on its own, without a long ingredients list to hide behind. Potatoes, ghee, the masala, salt. That is the whole dish, and that is the point.
